Coconut Rice Pudding
Ingredients:
- 1 cup jasmine rice
- 2 cups coconut milk
- 1 cup water
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Fresh coconut flakes for garnish
Instructions:
1. Combine the jasmine rice, coconut milk, and water in a medium saucepan.
2. Bring to a boil over medium heat, then reduce to a simmer.
3. Cook the rice for about 20 minutes, stirring frequently, until the liquid is mostly absorbed and the rice is tender.
4. Stir in the sugar, salt, and vanilla extract. Continue cooking for another 5-10 minutes until the pudding thickens to your desired consistency.
5. Remove from heat and let cool. The pudding will thicken as it cools.
6. Serve warm or chilled, garnished with fresh coconut flakes.
