Coconut Rice Pudding
Ingredients:
- 1 cup jasmine rice
- 2 cups coconut milk
- 1 cup water
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 pinch salt
- Fresh mango slices (optional, for serving)
Instructions:
1. Rinse the jasmine rice under cold water until the water runs clear.
2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, vanilla extract, and salt.
3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer. Stir occasionally.
4. Cook for about 20-25 minutes, or until the rice is tender and the liquid has mostly absorbed, leaving a creamy consistency.
5. Remove from heat and let it sit for 5 minutes before serving.
6. Serve warm or chilled, optionally with fresh mango slices on top.
