Coconut Curry with Vegetables


### Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 cup snap peas
- 1 sweet potato, diced
- 1 cup cauliflower florets
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving

### Instructions
1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
3. Stir in the curry powder and cook for another minute, allowing the spices to become aromatic.
4. Pour in the coconut milk and vegetable broth, stirring to combine.
5. Add the carrots, bell pepper, snap peas, sweet potato, and cauliflower florets to the pot. Stir well.
6. Bring the mixture to a boil, then reduce the heat to low and let simmer for 20-25 minutes, or until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve the coconut curry over cooked rice and garnish with fresh cilantro.
