Fish Sushi with Vegetables and Dumplings


Ingredients:
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 1 tsp salt
- 1 lb fresh fish (such as salmon or tuna), thinly sliced
- 1 cucumber, julienned
- 1 avocado, sliced
- 1 carrot, julienned
- Soy sauce
- Wasabi
- Pickled ginger
- Nori sheets
- 12 dumpling wrappers
- 1/2 lb ground pork or chicken
- 1/2 cup finely shredded cabbage
- 1/4 cup finely chopped scallions
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tbsp cornstarch mixed with 2 tbsp water
- Tablespoon of vegetable oil for frying

Instructions:

1. Prepare Sushi Rice:
a. Rinse the sushi rice under cold water until the water runs clear.
b. Combine the rice and water in a rice cooker or a pot with a tight-fitting lid. Cook according to the rice cooker's instructions or bring to a boil, reduce to a simmer, cover, and cook for 18 minutes.
c. In a small saucepan, combine rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Once rice is cooked, gently fold the vinegar mixture into the rice. Let it cool.

2. Prepare the Sushi:
a. Lay a sheet of nori on a bamboo sushi mat.
b. Spread an even layer of sushi rice over the nori, leaving about 1 inch at the top edge clear.
c. Place slices of fish, cucumber, avocado, and carrot along the center of the rice.
d. Roll the mat tightly to form the sushi roll. Seal the edge with a bit of water. Slice into pieces using a sharp knife.

3. Prepare Dumplings:
a. In a bowl, combine ground pork or chicken, shredded cabbage, chopped scallions, soy sauce, sesame oil, grated ginger, and minced garlic. Mix well.
b. Place a teaspoon of filling in the center of each dumpling wrapper.
c. Dip your finger in the cornstarch mixture and run it along the edge of the wrapper. Fold and pinch the edges to seal the dumpling.
d. Heat a tablespoon of vegetable oil in a skillet over medium heat. Add the dumplings and cook until the bottoms are golden brown.
e. Add 1/4 cup water to the skillet and cover immediately. Steam the dumplings for about 5 minutes or until the filling is cooked through.

4. Serve the sushi with soy sauce, wasabi, and pickled ginger. Serve the dumplings hot, optionally with a side of soy sauce for dipping. Enjoy your delicious fish sushi with vegetables and dumplings!
