Coconut Spice Elixir
1. Carefully drill a hole into the top of a fresh coconut using a coconut opener or a clean screwdriver. Drain the coconut water into a pitcher.
2. Reserve the coconut water and set the coconut aside.
3. In a small saucepan, heat 1 cup of water over medium heat. Add 1 cinnamon stick, 3-4 cloves, and a small piece of fresh ginger (about 1 inch, sliced). Let it simmer for about 10 minutes.
4. Strain the spiced infusion into the pitcher with the coconut water. Add 1-2 tablespoons of honey or maple syrup to taste and a pinch of nutmeg.
5. Stir well to combine and pour the spiced coconut drink back into the hollowed coconut shell for a fun presentation. Serve chilled or over ice for a refreshing treat.
