Coconut Cream Pie
Ingredients:
- 1 prepared pie crust
- 2 cups whole milk
- 1 cup sweetened shredded coconut
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Toasted coconut flakes for garnish
Instructions:
1. Preheat your oven to 350°F (175°C). Bake the pie crust according to the package instructions. Let it cool completely.
2. In a medium saucepan, combine the milk, shredded coconut, sugar, and salt. Heat over medium heat until it starts to simmer, then remove from heat.
3. In a separate bowl, whisk together the cornstarch and egg yolks until smooth. Gradually add this mixture to the saucepan, whisking constantly to incorporate and prevent curdling.
4. Return the saucepan to medium heat and cook, stirring continuously, until the mixture thickens and starts to bubble. Remove from heat and stir in the vanilla extract.
5. Pour the filling into the cooled pie crust. Place plastic wrap directly on the surface of the filling to prevent a skin from forming. Refrigerate for at least 3 hours, or until fully set.
6. In a large mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
7. Spread the whipped cream over the chilled pie. Garnish with toasted coconut flakes.
8. Slice and serve chilled. Enjoy!
