Coconut Macaroons
Ingredients:
- 4 large egg whites
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 5 1/2 cups sweetened shredded coconut
Instructions:
1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, beat the egg whites, sugar, salt, and vanilla extract until combined and slightly frothy.
3. Add the shredded coconut to the mixture and stir until evenly coated.
4. Using a small ice cream scoop or a spoon, form small mounds of the mixture and place them onto the prepared baking sheet, leaving some space between each mound.
5. Bake for 20-25 minutes, or until the edges of the macaroons are golden brown and the tops are set.
6. Allow the macaroons to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
7. Once cooled, the macaroons can be stored in an airtight container at room temperature for up to a week. Enjoy!
