Coconut Macaroons


Ingredients:
- 2 2/3 cups sweetened shredded coconut
- 2/3 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 large egg whites
- 1/4 teaspoon salt

Instructions:
1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
2. In a bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
3. In another bowl, whip the egg whites and salt until stiff peaks form. Gently fold the egg whites into the coconut mixture.
4. Using a spoon or a small cookie scoop, drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
5. Bake in the preheated oven for 20-25 minutes, or until the macaroons are golden brown around the edges and set on top.
6. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
