Breakfast Tacos
1. In a skillet, cook 4 strips of bacon over medium heat until crispy. Remove and drain on paper towels.
2. In the same skillet, sauté 1/2 diced onion and 1 diced bell pepper until soft.
3. In a bowl, whisk together 4 eggs with salt and pepper to taste. Pour the eggs into the skillet with the onions and bell peppers. Stir and cook until the eggs are scrambled and fully cooked.
4. Warm 4 small tortillas in a separate skillet or microwave.
5. Crumble the cooked bacon and sprinkle it over the scrambled eggs and vegetables.
6. Place the egg mixture into each tortilla, and top with shredded cheese, salsa, and avocado slices as desired.
7. Serve immediately and enjoy your breakfast tacos!
