Chicken and Mozzarella Pasta
1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
2. While the pasta is cooking, heat a large skillet over medium heat. Add the chicken breasts and cook until no longer pink, about 5-7 minutes per side. Remove from the skillet and let rest for a few minutes, then slice into strips.
3. In the same skillet, add the chopped tomatoes and cook until they begin to soften, about 3 minutes.
4. Add the cooked pasta to the skillet with the tomatoes and toss to combine.
5. Add the sliced chicken to the skillet and mix well.
6. Tear the mozzarella into small pieces and sprinkle over the top of the pasta. Cover the skillet and let it sit for a couple of minutes until the mozzarella begins to melt.
7. Serve immediately, garnished with fresh basil if desired.
