Lasagna with Fresh Tomato Sauce


1. Preheat your oven to 375°F (190°C).
2. In a large pot, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
3. Add fresh tomatoes, diced, and simmer for 20-30 minutes until the sauce thickens. Season with salt, pepper, and fresh basil.
4. In a separate bowl, mix ricotta cheese, grated Parmesan, and eggs. Season with salt and pepper.
5. Cook lasagna noodles according to package instructions. Drain and set aside.
6. In a baking dish, spread a thin layer of tomato sauce.
7. Add a layer of lasagna noodles, followed by a layer of the ricotta mixture, then a layer of shredded mozzarella cheese, and another layer of tomato sauce.
8. Repeat the layers until you run out of ingredients, ending with a layer of tomato sauce topped with mozzarella cheese.
9. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes or until the cheese is golden and bubbly.
10. Let the lasagna cool for 10 minutes before serving.
