Greek Yogurt and Oat Pancakes


1. In a mixing bowl, combine 1 cup of rolled oats and 1 cup of Greek yogurt. Let it sit for 5-10 minutes to soften the oats.
2. Add 1 large egg, 1 teaspoon of vanilla extract, and 1 tablespoon of honey to the mixture. Stir well to combine.
3. In a separate bowl, mix 1 cup of whole wheat flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and a pinch of salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
6. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
7. Flip the pancakes and cook for an additional 2-3 minutes or until golden brown and cooked through.
8. Serve the pancakes warm with your favorite toppings such as fresh berries, honey, or maple syrup.
