Spaghetti Carbonara


1. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente.
2. In a large bowl, whisk together eggs, Parmesan cheese, and black pepper until well combined.
3. In a large skillet, cook diced pancetta over medium heat until crispy. Remove from skillet and set aside.
4. Add cooked spaghetti to the skillet, tossing to coat in the pancetta fat.
5. Remove the skillet from heat and quickly stir in the egg mixture, tossing constantly to create a creamy sauce.
6. Add pancetta back to the skillet and toss to combine.
7. Serve immediately, garnished with extra Parmesan and black pepper.
