1. Boil a large pot of salted water and cook 400 grams of spaghetti until al dente.
2. In a separate pan, cook 150 grams of diced pancetta over medium heat until crispy.
3. In a bowl, whisk together 2 eggs, 1 egg yolk, 50 grams of grated Parmesan cheese, and a pinch of black pepper.
4. Reserve 1 cup of the pasta water, then drain the pasta.
5. Add the hot pasta to the pan with pancetta and remove from heat.
6. Quickly mix in the egg and cheese mixture, stirring quickly to create a creamy sauce, using reserved pasta water as needed.
7. Serve immediately garnished with more Parmesan and black pepper.
