Coconut Ice Cream Surprise


Ingredients:
- 2 cans of full-fat coconut milk
- 3/4 cup of sugar
- 1 tablespoon of vanilla extract
- A pinch of salt
- 1/2 cup of shredded coconut
- Optional toppings: chocolate chips, fresh berries, crushed nuts

Instructions:
1. In a medium saucepan, combine the coconut milk, sugar, and salt. Cook over medium heat, stirring constantly, until the sugar is fully dissolved, and the mixture begins to steam. Do not let it boil.
2. Remove the mixture from the heat and stir in the vanilla extract.
3. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours, or until well chilled.
4. Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions.
5. During the last few minutes of churning, add the shredded coconut.
6. Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
7. Serve scoops of coconut ice cream in bowls and add optional toppings as desired for the surprise element. Enjoy!
