Classic Steak Dinner


Ingredients:
- 2 ribeye steaks
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, smashed
- 4 sprigs fresh thyme
- 4 tablespoons unsalted butter
- 1 lemon, cut into wedges

Instructions:
1. Take the steaks out of the refrigerator and let them come to room temperature for 30 minutes. This allows for even cooking.
2. Season both sides of the steaks generously with salt and black pepper.
3. Heat a large cast-iron skillet over high heat until it’s smoking hot. Add the olive oil.
4. Carefully place the steaks in the hot skillet. Sear the steaks for 2-3 minutes without moving them until a crust forms.
5. Flip the steaks and add the smashed garlic, thyme, and butter to the skillet.
6. Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter for another 2-3 minutes.
7. Cook to your desired doneness using a meat thermometer (125°F for rare, 135°F for medium-rare, 145°F for medium).
8. Transfer the steaks to a cutting board and let them rest for 5-10 minutes. Squeeze lemon wedges over the top before serving.
9. Serve with your favorite sides such as mashed potatoes, steamed vegetables, or a fresh salad.
