Pumpernickel Reuben Sandwich


1. Preheat a skillet or griddle over medium heat.
2. Butter one side of each slice of pumpernickel bread.
3. Place half of the bread slices, buttered side down, on the skillet.
4. Spread a layer of Thousand Island dressing on each slice of bread in the skillet.
5. Layer slices of corned beef on top of the dressing.
6. Add a layer of sauerkraut over the corned beef.
7. Top with slices of Swiss cheese.
8. Spread a layer of Thousand Island dressing on the unbuttered side of the remaining bread slices and place them dressing-side down on top of the sandwiches in the skillet.
9. Grill the sandwiches until the bread is golden brown and the cheese is melted, about 5-7 minutes per side.
10. Remove from skillet, let cool slightly, then cut in half and serve warm.
