Preheat oven to 350°F (175°C).
In a bowl, cream together 1 cup of softened butter and 1 cup of sugar until light and fluffy.
Add 1 egg and 1 teaspoon of vanilla extract, mix well.
In a separate bowl, whisk together 2 cups of flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
Gradually add the dry ingredients to the wet mixture, stirring until combined.
Roll dough into small balls and place on a baking sheet.
Bake for 10-12 minutes until the edges are golden.
Allow to cool before serving and enjoy your engagement cookies!
