Decadent Chocolate Birthday Cake with Caramel Icing


Ingredients:

For the Cake:
- 1 box of chocolate cake mix
- Eggs, water, and oil as required by the cake mix instructions

For the Caramel Icing:
- 1 cup unsalted butter
- 2 cups packed light brown sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 3 cups powdered sugar

For Decoration:
- Chocolate sprinkles

Instructions:

1. Preheat your oven to the temperature specified on the cake mix box. Grease and flour two 9-inch round cake pans.

2. Prepare the chocolate cake mix according to the package instructions. Divide the batter evenly between the prepared pans.

3. Bake the cakes for the time specified on the cake mix, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

4. While the cakes are cooling, prepare the caramel icing. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream. Bring to a boil and let boil for 1 minute, stirring constantly.

5. Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool slightly, then gradually beat in the powdered sugar until smooth and creamy. If the icing is too thick, add a bit more heavy cream, a tablespoon at a time, until you reach the desired consistency.

6. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of caramel icing on top. Place the second layer on top and spread icing over the top and sides of the entire cake.

7. Sprinkle chocolate sprinkles generously over the top of the cake for a delightful decoration.

8. Allow the cake to set at room temperature for an hour before serving to ensure the icing firms up a little.
