Grilled Chicken Kabobs
1. Preheat the grill to medium-high heat.
2. Cut 2 pounds of boneless, skinless chicken breasts into 1-inch cubes.
3. In a bowl, whisk together 1/4 cup olive oil, 1/4 cup soy sauce, 1/4 cup honey, 2 tablespoons lemon juice, 3 cloves minced garlic, 1 teaspoon ground black pepper, and 1 teaspoon paprika.
4. Add the chicken cubes to the marinade and let sit for at least 30 minutes, or up to 2 hours for more flavor.
5. Thread the marinated chicken onto skewers, alternating with chunks of bell peppers, red onions, and cherry tomatoes.
6. Place the kabobs on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.
7. Remove from the grill and let rest for a few minutes before serving.
8. Serve warm with a side of rice or salad.
