Bangkok Mango Sticky Rice


Ingredients:
- 1 cup glutinous rice
- 1 1/2 cups water
- 1 can (13.5 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds (for garnish)

Instructions:
1. Rinse the glutinous rice under cold water until the water runs clear.
2. In a medium-sized pot, combine the glutinous rice and 1 1/2 cups of water. Let it soak for 30 minutes.
3. Bring the rice to a boil over medium heat, then reduce to low heat and simmer for about 15-20 minutes until the water is absorbed and the rice is cooked through.
4. While the rice is cooking, heat the coconut milk, sugar, and salt in a small saucepan over medium heat until the sugar is dissolved. Do not let it boil.
5. Once the rice is cooked, pour about 3/4 of the coconut milk mixture over the rice and stir to combine. Cover the pot and let the rice absorb the coconut milk for 10 minutes.
6. To serve, place a portion of the sticky rice on a plate and top with slices of ripe mango. Drizzle the remaining coconut milk mixture over the mango and rice.
7. Garnish with a sprinkle of sesame seeds and serve warm or at room temperature.
