Coconut Macaroons


Ingredients:
- 14 oz sweetened shredded coconut
- 14 oz sweetened condensed milk
- 1 tsp vanilla extract
- 2 large egg whites
- 1/4 tsp salt

Instructions:
1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the coconut, sweetened condensed milk, and vanilla extract. Stir until well mixed.
3. In a separate bowl, beat the egg whites and salt together with an electric mixer until stiff peaks form.
4. Gently fold the beaten egg whites into the coconut mixture until fully combined.
5. Use a small ice cream scoop or spoon to drop mounds of the mixture onto the prepared baking sheet, about 1 inch apart.
6. Bake for 20-25 minutes, or until the macaroons are golden brown around the edges and slightly firm to the touch.
7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
