Coconut Curry Chicken


Ingredients:
- 1 lb chicken breast, diced
- 1 can coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ginger, grated
- 1 bell pepper, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
2. Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
3. Stir in the curry powder, making sure it evenly coats the onions, garlic, and ginger.
4. Add the diced chicken breast to the skillet, cooking until it's no longer pink, about 5-7 minutes.
5. Pour in the coconut milk, stirring to combine everything well. Bring to a simmer.
6. Add the bell pepper slices and let the curry simmer for about 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh cilantro, over steamed rice or with naan bread.
