Delicious Raspberry Pancakes


1. In a large bowl, whisk together 1 cup all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, and a pinch of salt.
2. In a separate bowl, whisk together 1 cup milk, 1 egg, and 2 tablespoons melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix.
4. Gently fold in 1 cup of fresh raspberries.
5. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
6. Pour 1/4 cup of batter onto the skillet for each pancake.
7. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
8. Serve with maple syrup, additional raspberries, and a dusting of powdered sugar if desired.
