Pan-Seared Steak
1. Remove steak from the refrigerator and allow it to reach room temperature, about 30 minutes.
2. Pat the steak dry with paper towels and season generously with salt and pepper on both sides.
3. Heat a cast iron skillet over high heat until it begins to smoke.
4. Add a tablespoon of oil to the skillet, then immediately place the steak in the pan.
5. Sear the steak for 3-4 minutes on each side, flipping once, until a brown crust forms.
6. Reduce the heat to medium and add a few cloves of garlic and sprigs of thyme or rosemary to the skillet.
7. Add a couple of tablespoons of butter to the skillet and baste the steak by spooning the melted butter and herbs over it for another 2-3 minutes.
8. Use a meat thermometer to check the internal temperature: 125°F for rare, 135°F for medium rare, 145°F for medium.
9. Once the steak reaches the desired doneness, remove it from the skillet and let it rest for 5-10 minutes before slicing.
10. Serve the steak with your favorite sides and enjoy!
