Classic Cherry Pie


1. Preheat your oven to 425°F (220°C).
2. In a medium saucepan, mix 1 cup of sugar, 1/3 cup of cornstarch, and a pinch of salt.
3. Stir in 4 cups of pitted, fresh cherries and 1/4 cup of water.
4. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 2 minutes, then remove from heat and stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of almond extract if desired. Let the filling cool to room temperature.
5. Roll out half of the pie dough on a floured surface and fit it into a 9-inch pie plate. Trim the overhanging dough to 1 inch beyond the edge of the pie plate.
6. Pour the cooled cherry filling into the pie shell.
7. Roll out the second half of the pie dough and place it over the filling. Trim the edges and crimp them to seal.
8. Cut several slits in the top crust to allow steam to escape. Brush the top with a beaten egg and sprinkle with sugar if desired.
9. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
10. Allow the pie to cool on a wire rack before serving.
