Coconut Rice Pudding


1. Rinse 1 cup of jasmine rice under cold water until the water runs clear.
2. In a medium-sized pot, combine the rinsed rice with 1.5 cups of water and bring it to a boil.
3. Once boiling, reduce the heat to low, cover the pot, and let simmer until the water is absorbed and the rice is tender, about 15 minutes.
4. In a separate saucepan, combine 2 cups of coconut milk, 1/3 cup of sugar, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract. Heat over medium heat until the sugar is dissolved.
5. Add the cooked rice to the coconut milk mixture and cook over medium heat until the mixture is creamy and thickened, about 10 minutes.
6. Remove from heat and let it cool slightly.
7. Serve warm or chilled, garnished with a sprinkle of shredded coconut and a drizzle of honey if desired.
