Vegetable Sushi Rolls


1. Rinse 1 cup of sushi rice under cold water until the water runs clear.
2. Cook the rice according to the package instructions and let it cool to room temperature.
3. In a small bowl, mix 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt until dissolved. Gently fold this mixture into the cooked rice.
4. Slice a carrot, cucumber, and avocado into thin strips.
5. Place a sheet of nori (seaweed) on a bamboo sushi mat, shiny side down.
6. Wet your hands and spread a thin, even layer of sushi rice over the nori, leaving a 1-inch border at the top.
7. Arrange carrot, cucumber, and avocado strips horizontally across the middle of the rice.
8. Using the bamboo mat, carefully roll the sushi tightly from the bottom edge, pressing firmly to shape it into a cylinder.
9. Use a sharp knife to slice the roll into bite-sized pieces, cleaning the knife between cuts to maintain clean edges.
10. Serve the vegetable sushi rolls with soy sauce, pickled ginger, and wasabi.
