Classic Spaghetti Bolognese


1. Heat a large saucepan over a medium heat. Add a tablespoon of olive oil and once hot, add the finely chopped onion, carrot, and celery.
2. After the vegetables have softened, increase the heat and add the minced beef. Cook until the beef is browned all over.
3. Pour in the red wine and let it simmer until it has mostly evaporated. Add the chopped tomatoes, tomato puree, and beef stock.
4. Add the bay leaf and oregano, then season with salt and pepper. Reduce the heat and let it simmer gently for about an hour, stirring occasionally.
5. Cook the spaghetti according to the packet instructions. Drain well.
6. Serve the Bolognese sauce over the spaghetti, and finish with a sprinkle of grated Parmesan cheese.
