Savory Herb Mashed Potatoes
1. Peel and chop 2 pounds of potatoes into evenly sized chunks.
2. Bring a large pot of salted water to a boil.
3. Add potatoes and cook until tender, about 15 minutes.
4. Drain the potatoes and return them to the pot.
5. Mash potatoes with a potato masher or fork.
6. Stir in 1/2 cup of milk, 1/4 cup of butter, and salt and pepper to taste.
7. Mix in 2 tablespoons of chopped fresh herbs, such as rosemary or thyme, until well combined.
8. Serve warm as a side dish.
