Spaghetti Carbonara


1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Save 1 cup of pasta water and drain the rest.
2. Meanwhile, in a pan over medium heat, cook pancetta until crispy. Remove from heat.
3. In a bowl, whisk together eggs, Parmesan, and a pinch of black pepper.
4. Toss hot spaghetti with pancetta and slowly pour egg mixture over pasta while stirring quickly to combine.
5. Add reserved pasta water as needed to achieve a creamy consistency.
6. Serve immediately with additional Parmesan and fresh parsley.
