1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
2. Add 1 chopped onion and 2 minced garlic cloves, sauté until translucent.
3. Stir in 1 tablespoon of ginger, 1 tablespoon of curry powder, and 1 teaspoon of chili flakes.
4. Add 1 can of coconut milk and bring to a simmer.
5. Stir in 2 cans of drained chickpeas and cook for 10 minutes.
6. Add 1 cup of chopped spinach and simmer for 5 more minutes.
7. Season with salt and pepper to taste.
8. Serve hot over cooked jasmine rice, and garnish with fresh cilantro.
