Tomato, Onion, and Brinjal Stir Fry


1. Wash and slice 2 medium-sized brinjals into thin rounds.
2. Dice 2 ripe tomatoes and 1 large onion.
3. Heat 2 tablespoons of oil in a skillet over medium heat.
4. Add the sliced onions and sauté until they turn translucent.
5. Add the brinjal slices to the skillet and stir occasionally for about 5 minutes.
6. Stir in the diced tomatoes and add salt to taste, along with a pinch of turmeric powder.
7. Cover the skillet and cook for another 10 minutes, stirring occasionally, until the brinjals are tender.
8. Uncover and cook for an additional 2-3 minutes to let any excess moisture evaporate.
9. Adjust seasoning as needed and garnish with fresh coriander leaves before serving.
