Basque Cheesecake
1. Preheat the oven to 200°C (400°F). Grease a 10-inch springform pan and line the bottom with parchment paper.
2. In a large bowl, beat 2 1/4 lbs (1 kg) of cream cheese until smooth.
3. Gradually mix in 1 3/4 cups (350g) sugar until fully combined.
4. Add 5 large beaten eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
5. Mix in 2 cups (500 ml) heavy cream gently, followed by 1 teaspoon vanilla extract, and a pinch of salt.
6. Sift and fold in 1 tablespoon of flour just until fully combined.
7. Pour the batter into the prepared pan.
8. Bake in the preheated oven for 50-60 minutes, or until the top is deeply golden and slightly burnt.
9. Let it cool in the pan before removing the springform, and let cool completely before serving.
