Lobster and Mango Coconut Curry
Ingredients:
- 2 lobster tails
- 1 ripe mango, diced
- 1 can coconut milk
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Fresh cilantro, chopped
- Salt to taste
- Jasmine rice for serving
Instructions:
1. Begin by preparing the lobster. Bring a pot of salted water to a boil and cook the lobster tails for about 8-10 minutes until they are bright red. Let them cool slightly, then remove the meat from the shells and chop it into bite-sized pieces. Set aside.
2. In a large pan, heat some oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
3. Stir in the red curry paste and cook for 2-3 minutes, ensuring the paste is well combined with the onion mixture.
4. Pour in the coconut milk, fish sauce, and lime juice. Stir well and bring the mixture to a gentle simmer.
5. Add the diced mango and let it cook in the curry for about 5 minutes, allowing the mango to soften slightly.
6. Gently fold in the cooked lobster pieces and let them heat through for 2-3 minutes. Taste the curry and add salt if needed.
7. Serve the Lobster and Mango Coconut Curry over jasmine rice and garnish with freshly chopped cilantro.
